Best gaming cpu for high end flight simulators

I'm a life long Mac user but my two grandsons (ages 13 & 14) are in 'training' to become pilots and the macs can't run the frame rates per second that PC's can. So, I researched every brand new, just released, CPU I could find find and this 7900 cpu outperforms (in gaming) even the 7950X for FPS. My two grandsons are going to be building a two PC system to run their triple monitor flight system. With the 7900X cpu and the ASRock Radeon RX 6900 XT PHANTOM GAMING D Graphics Card 16GB GDDR6, AMD RDNA2 (RX6900XT PGD 16GO) to drive the triple displays with the center display a 65" LG C1 OLED TV and the twin (side screen) 55" LG C1 OLED tv's for the 'out of the cockpit' views, the twin Honeycomb A pilot 'yokes', a Honeycomb 'Bravo' throttle and twin 'Logitech rudders'. The other computer, networked via ethernet in a HUB, is an HP OMEN 30L GT13 Gaming Desktop PC Ryzen 7 16GB 512GB + 1TB 8GB 5700XT HDMI 3 DP to run the four cockpit touchscreens, the switch and the USB peripherals.
